Grapefruit Pie

(E. Lossman)

1 cup water

1 cup sugar

3 tbsp. cornstarch

few grains salt

3/4 cup grapefruit juice

2 egg yolks

Boil sugar, water and 1/2 cup of the grapefruit juice. Mix the cornstarch and salt with 1/4 cup of the grapefruit juice, and stir into the boiling water and sugar. When thick, remove from heat and add the egg yolks, first stirring some of the mixture into them. Pour into a baked pie shell.

Meringue:
2 egg whites

1/4 cup sugar

1 1/2 tsp grapefruit juice

Beat egg whites stiff. Beat into them the sugar, then the grapefruit juice. Spread over pie and brown in oven.
