Stuffed Eggplant

Boil eggplant until about half done. Scoop out inside and stuff with the following:

1/2# ground meat, fried brown

Chop an onion and fry with meat. Add a little cheese. Now mix with one small can mushrooms. Add one cup tomatoes, 1 cup bread crumbs, 1 egg and eggplant that was scooped out. Mix altogether and put back into eggplant. Bake until well done in a slow oven.
